Feature Recipe--Courtesy of The City Tavern

This recipe comes from the historic City Tavern Restaurant in Olde City Philadelphia.  Winter is upon us and so are the bountiful flavors that it brings.  That being said, what is more apropos than the Apple Cranberry Cobbler served in the cozy setting of City Tavern.  The recipe is published in Chef Walter Staib's new cookbook, A Sweet Taste of History: More than 100 Elegant Dessert Recipes from America's Earliest Days, available for purchase here.

Apple Cranberry CobblerCity Tavern cobbler

Yield: Six 1-cup ramekins, or one 9x13 baking dish

2 cups apple cider, divided
1/8 cup granulated sugar
¼ cup brown sugar, packed
Pinch of kosher salt
3 Tbsp + ½ tsp cornstarch
1 ½ tsp ground cinnamon
¾ cups fresh cranberries
4 Granny Smith apples, peeled, cored, and sliced
1 recipe for Streusel topping (see below)

  1. In a medium sauce pot, combine 1 ½ cups of cider, sugars, and salt and bring to a boil.
  2. In a small bowl, whisk together cornstarch and cinnamon, then make a slurry by whisking the remaining ½ cup of cider into the cornstarch and cinnamon.
  3. When the cider and sugars come to a boil, whisk in slurry and return to boil, stirring continuously. Set aside.
  4. Preheat oven to 375°
  5. Place apples and cranberries in a large bowl.  Pour hot cider mixture over them and toss together. Spoon into greased ramekins, top with streusel, and bake for approximately 20 minutes or until the topping is brown and the filling is bubbling.
  6. Serve warm with Bassetts vanilla ice cream.


Oat and Nut Streusel

Yield: 8-10 4-6 oz portions

6 oz (1 ½ sticks) unsalted butter
1 cup sugar
3/4 cup brown sugar
1 tsp salt
1 ½ cups all purpose flour
1 Tbsp cinnamon
1 tsp ground nutmeg
3/4 cup oats
1 ½ cups nuts


  1. In the bowl of an electric mixer fitted with the paddle attachment, on low speed, mix the butter, sugars, and salt until only small, pea-sized bits of butter remain.
  2. Add the flour, cinnamon, nutmeg and oats and mix a few turns.
  3. Add in the nuts and continue mixing on low speed until the flour is absorbed; it should be crumbly looking.


**Freezes well.  Lay flat on sheet pan in freezer. Bag after frozen.

Temple Football players and Spirit Squad scoop ice cream

The Temple University Football Team and Spirit Squad were at the Reading Terminal Market on Wednesday, July 24th scooping ice cream and serving Temple Sundaes--Bassetts Cherry Vanilla Ice Cream topped with whipped cream and a Temple "T" cookie made by Flying Monkey Bakery.  Other players served at other merchants in the market, including Miller's Twist, Beiler's Bakery and Beck's Cajun Cafe. Bassetts Ice Cream is in China!

In May 2008, the first order of Bassetts Ice Cream was sent by container ship to Beijing, China.  In July 2008, the first overseas ice cream shop serving Bassetts Ice Cream was opened in Yantai, a coastal city southeast of Beijing, by Mr. Sun Gongyun (James Sun). Two additional store locations were opened in Taiyuan and another just celebrated a grand opening in Fuzhou.  Mr. Sun established the Beijing Sino-American Food Company in order to introduce Bassetts "World Famous" Ice Cream to this rapidly developing market.  In addition to his ice cream shops, Mr. Sun is distributing Bassetts Ice Cream to restaurants, hotels and grocery stores.  Today, China is the second largest market for Bassetts Ice Cream Company, outside the Philadelphia area.  Recently, Bassetts President Michael Strange and Reading Terminal Market store operator Roger Bassett traveled to China to meet with Mr. Sun and visit the stores and see future sites for Bassetts Ice Cream locations in China. Bassetts Ice Cream marks 150th Year Anniversary in 2011!
Bassetts Ice Cream celebrated it's 150th Anniversary at the 5th Annual Ultimate Philadelphia Ice Cream Festival on July 16th, 2011. Highlights of the day included ice cream eating contests, tastings, games, live music and a cake cutting by the Bassett family.

President ObamaWhen the President was in Philadelphia on Monday, September 20th, 2010, he stopped into the Reading Terminal Market and purchased cheesesteaks, apples and Bassetts Ice Cream!
